bacon pancakesPancakes are a staple at my house.  Of course we eat them for breakfast, but they also are a really good dinner in a pinch.  My kids love to find out that we are having pancakes for dinner.  One evening, I decided to add the bacon and sausage to the pancakes while they were cooking, my children lost their minds.  They thought that it was the best idea that I have ever had.  It is the perfect combo of sweet and savory.  Fluffy pancakes, salty sausage and bacon, and pure maple syrup.

Here is what you need:

Your favorite pancake batter
cooked bacon
cooked sausage

bacon and sausage pancakesIt took a few trials to get it just right.  At first, I kept the sausage patties whole, and that did not work.  Cutting the sausage into pieces, and scattering them over the batter was perfect.

bacon and sausage pancakesThen I tried to use a whole strip of bacon.  I thought that an oblong pancake would look cool.  They were really hard to flip and the bacon would fall out of the center.  I cut the strips in half, and they were just the right size.  Next time, I think that I would chop up the bacon like I did the sausage.

    looks yummy. I always have trouble deciding between bacon or sausage…..great idea to just have both. Why didn’t I think of that! Have you tried the round stuffed pancakes where you can add something to the center – think they are called ebbelskivers or something like that. Love your blog…..bummed I didn’t win the camera……next time pick me! xo

    I just stumbled across this post of yours and cannot resist offering my advice. I am an avid bacon lover and have also made bacon pancakes in the past that are oblong, using a full piece of bacon. If you lay the slice of bacon down first, then pour the batter over top of the slice, they are much easier to flip and the bacon won’t fall out. Hope that this helps!! :)
