This Chocolate Pudding Cake is a really fun and easy dessert to make on a weeknight. Tonight we were celebrating that tomorrow the kids have a random day off of school, and this was the perfect way. I made it right before we sat down to dinner and it was warm and gooey when it came time for dessert. The cold whipped cream on the warm chocolate cake is nothing short of heaven.
I know that they are not the prettiest desserts, but I guarantee that what they lack in beauty they make up for in taste.
1 cup sugar
1/2 cup cocoa
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
4 Tablespoons melted butter
1 egg yolk
2 teaspoons vanilla
1/2 cup chocolate chips
1 cup boiling water
whipped cream or vanilla ice cream
Preheat the oven to 350 degrees. Spray 6 ramekins with nonstick cooking spray. Whisk together 1/2 cup sugar and 1/4 cup cocoa in a small bowl and set aside.
In another bowl, whisk together flour, the remaining 1/2 cup sugar and 1/4 cup cocoa, baking powder, and salt in large bowl.
Add the milk, butter, and vanilla. Whisk until just combined.
Put 2 Tablespoons of the batter in the ramekins.
Top with 1 1/2 Tablespoons of the reserved sugar and cocoa mixture.
Top with 2 Tablespoons of boiling water.
Bake for 20 to 25 minutes or until the tops are just cracked.
Top with whipped cream or vanilla ice cream.
A fun and easy dessert that will impress your little (and big) ones.

Marina - I printed out your post and baked them up because they looked so delish! Afterwards, I realized you never mentioned when to put the egg yolk in. So, it went sans egg. Still pretty good but I will make them again to see what they are really like. Thanks!
