brow-1-of-1while i am not claiming to be a master in the kitchen, goodness knows i am not, i still enjoy attempting new recipes now and again. these chocolate brownies cameo as a cupcake and are delectably delicious. even better – they are not terribly bad for you either! adapted from a weight watchers recipe, i did some tweaking to make them even better for us. does my family notice that they are healthy? not a chance. they are usually gone within a few nights. i doubled the batch this last time and hope they will maybe make it to the weekend… doubtful, but a girl can hope!

ingredients

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 cup + 2 Tablespoons brown sugar,
firmly packed
6 tablespoons unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon table salt
1 cup h20
1/2 cup unsweetened applesauce
1 teaspoon apple cider vinegar
1 tablespoon margarine, melted
1 teaspoon vanilla extract

instructions

  • preheat oven to 350
  • in a bowl, stir together flour, brown sugar, cocoa, baking soda, and salt
  • in a separate bowl, stir together remaining ingredients
  • pour water mixture over flour mixture and stir until batter is smooth
  • pour into a non stick 12 hole muffin tin coated with cooking spray, filling until half full (will make a total of 18)
  • bake until toothpick inserted comes out clean, 18-20 minutes
  • remove from oven, allow to sit for 5 minutes, then turn out onto rack to cool completely
  • serve with a smile and big glass of milk, the kids will love you!

    angie…these sound great! i’m going to try them. i’ve been trying to find some new “healthier” recipes for some of my favorite desserts (aka..brownies and chocolate chip cookies).
