Recipe share: fruit & veggie muffins.

Erin Chase is one of the most creative moms I have found online, she literally makes each and every dinner for her family of four, for just $5. I knew when I saw these muffins I had to give them a try. I took a bit of a spin on them and thought i’d share : )

Ingredients

1/2 c whole wheat flour
1/2 c all p flour
1/3 c sugar
2 eggs
1/2 t baking soda
1 t baking powder
1 t cinnamon
1 c mashed/grated fruit &/or veggies
3 T unsweetened applesauce

Instructions

Preheat Oven to 350.
Mix eggs, applesauce, sugar, fruit/veggie mix.
Wisk well.
Add in flour, baking soda, baking powder, cinnamon.
Mix well.
Bake for 15-20 min.

I usually double the recipe and freeze them! You can pop them out of the freezer and microwave to thaw for an instant healthy snack! First time I make banana and shredded carrot – VERY tasty. This time banana and pear. The kids love them, and so does the husband!

mmmmm! these sound yummy! I am all about hiding the fruit and veggies is the kids’ snacks…especially dd…she only likes bananas..no vegies :( We are leaving for a road trip to Washington dc on saturday (just me and the kids)…these would be a great snack alternative for the car!!! thanks for sharing!

angi- one of my room moms at school jsut sent me 2 great healthy recipes…one for pancakes/waffles and the other for muffin/banana bread…would you like me to email you the recipes?
