Rolo Brownies

rolo brownie recipeWhat do you do when you have an almost full bag of Rolos that you need to use up? You make brownies and stud them with Rolos. And people will thank you for it, I guarantee.

This bronwie recipe is my go-to brownie recipe these days. I like that it is super easy to make, just melt butter and chocolate together, whisk in some eggs and add some flour. Totally cinchy, right? I also love that it is a 9×13 size recipe. A lot of brownie recipes are written for smaller square pans. If I am making brownies, I usually need to make a lot to feed the amount of people in my home. And have enough to give as treats to neighbors, friends, co-workers, you get the idea.

I have added a layer of salted caramel to the middle, cookies and cream candies, Reese’s Peanut Cups, and even frosted these. This recipe is a great recipe to have in your pocket. You can do a million things with it.

As for what kind of chocolate to use, it depends on how sweet you like your brownies. I had about 9 ounces of bittersweet, and added a bar of milk to make up the 11 ounces. But a good quality dark chocolate will work perfectly.

11 ounce chocolate, chopped
1 1/2 cups sugar
1/2 cup brown sugar
5 eggs, room temperature
2 teaspoons vanilla
1 1/4 cups flour
1 teaspoon salt
2 Tablespoons cocoa
12 ounce bag Rolos, unwrapped

rolo brownie recipeMelt the butter and chocolate gently over a double boiler. Whisk until smooth, let cool slightly.

Add both sugars and vanilla.

rolo brownie recipeAdd flour, salt, and cocoa. Stir to combine.

rolo brownie recipePour half of the batter into a 9×13 pan that has been sprayed with cooking spray. Arrange Rolos over batter.

rolo brownies Bake in a preheated 350 degree oven for 30 minutes, or until brownies are set. Let cool completely before cutting into squares. I know that you are going to want to break into these as soon as they come out of the oven, but resist the urge. The caramels need to cool and set up again, or they will just melt all over the place. Please do not ask me how I know that.:)

Ingredients
