As spring approaches I am loving quick and easy meal options that give my family more time for play and less time in the kitchen. Here is one of my favorite go-to recipes. It’s a simple southwestern salad that is perfect for a quick lunch, a picnic, potluck or hearty dinner (with a few additions)–easy, healthy and perfect for the season!
Chopped romaine lettuce
Black beans (rinsed)
Sweet corn (I LOVE Trader Joe’s roasted corn in here)
Add-ins + toppings:
Red or yellow bell peppers
Cheese (cheddar or smoked gouda)
Chopped Onion or onion strings
Tortilla chips (add these last, or set aside and sprinkle on individual servings)
Make it hearty:
Top with grilled chicken or steak strips
The delish homemade Barbeque Ranch dressing:
1/2 cup sour cream or plain yogurt
1/2 cup smoky/sweet barbeque sauce
Juice of 2 limes
Pinch of garlic powder
1/4 teaspoon salt
1 tsp honey (optional)
Adjust quantity of ingredients to taste.
(or simply add equal parts BBQ sauce to your favorite prepared ranch dressing):
