Sweet Corn Pasta

In celebration of the color yellow, a sweet corn gremolata pasta for you.sweet corn pasta recipe

I love a simple and quick dinner.  This sweet corn pasta took mere minutes (15 to be exact) to make and everyone in my family ate and enjoyed it.  That does not happen very often.

Sweet, fresh corn works best here, but I would bet that if you needed a little sunshine in the dead of winter, that frozen corn would be just fine.

2 cups cooked sweet corn kernels
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat leaf parsley
1/4 cup olive oil
2 Tablespoons fresh lemon juice
2 crushed garlic cloves
1 Tablespoon lemon zest
Parmesan cheese for serving

In a large bowl, combine the olive oil, lemon juice, lemon zest, basil and parsley.

sweet corn pasta recipeToss to combine and season with salt and pepper.  Meanwhile, cook the angel hair according to the package directions.  Toss the pasta with the corn mixture.

B - When do you put in the garlic?

Donna - That is right, when do you put the garlic in & is it chopped, sauteed or? Otherwise sounds tasty & fresh.

Christy - I had the same question about the garlic after I made this recipe last night. I didn’t realize that it was excluded from the steps until after I was already making the dish. I decided to mince it up and throw it in the olive oil/lemon/herb mix. It was VERY tasty and the garlic gave the dish a nice, spicy zing. However, I’m thinking that maybe the raw garlic would overwhelm some people who don’t love it as much as I do.

Stephanie P - Hi! I am new to your blog and right away found this recipe! I tried it for dinner tonight. We liked its simplicity and versatility. You could really add anything in addition to the corn. My only concern about the dish was to find a solution to make the noodles and such less dry. I think I will add an extra 1/4 olive oil & maybe a few extra seasonings I have in my cupboard.
